Cá mối kho sả với thịt cá bùi béo, ngấm đều gia vị và hỗn hợp sả ớt cay thơm đậm đà. Những ngày trời mưa rả rít mà được ăn món cá kho cay này rất ngon và ấm lòng.
Cá mối làm sạch, bỏ vảy rửa sạch với muối và chanh, cắt khúc vừa ăn để ráo. Ướp cá với 1/2 muỗng canh đường, 1 muỗng cà phê hạt nêm hoặc bột ngọt, 1 muỗng cà phê muối, 2 muỗng cà phê bột cà ri, ít củ nghệ cắt lát (nếu thích), gần 1/2 muỗng canh nước mắm, ít tiêu, ớt băm, hành tím và tỏi băm. Trộn đều ướp 20 phút. - Băm nhỏ hoặc bào mỏng sả. Băm nhỏ tỏi ớt. Lưu ý: món này dùng nhiều sả mới ngon.
Đun nóng 3 muỗng canh dầu, cho sả, tỏi, ớt băm vào phi thơm cho cá vào kho với lửa vừa, thịt cá săn lại thì cho ít nước vào kho cùng, nêm lại cho vừa ăn, thêm ớt trái và tỏi nguyên tép vào kho cùng cho thơm. Cá chín tắt bếp cho hành lá và ớt. Dùng nóng với cơm.
